Sue Carnaby's Victoria Sponge Recipe

This is the basic Victoria Sponge recipe you will find in most recipe books but, of course, results depend upon the way you mix the ingredients and the oven in which you cook your sponge.

6 ozs caster sugar

6 ozs soft margarine

3 large eggs

6 ozs self-raising flour

½ teaspoon Madagascar Bourbon vanilla essence

You can either use the all-in-one method and mix everything together at the same time, or beat the sugar with the margarine, beat in the eggs and the vanilla essence, and then add the flour.

Bake in the middle of the oven (mine is electric so at 160 degrees) for about 30 minutes, in two greased and lined 7 inch sponge tins.

When cooked, leave for five minutes and turn out on to a cooling rack.

Sandwich together with your favourite jam, sit down with a nice up of tea and some good friends.Enjoy!
